There are ingredients that work very well together and that it is not usual for us to use when we cook on a daily basis. An example is pumpkin and ground beef: the sweet flavor and creamy pumpkin super combine with braised ground beef and provide a tasty and very nutritious meal.

To prove this, I share with you here my recipe for pumpkin kebab stuffed with ground beef that is very juicy and tasty, perfect to accompany with a salad at a family lunch or dinner. The ingredients are easy to find and the preparation is very practical. In this case, I chose to roast the cabotiĆ” pumpkin in the oven, that way it has a smoky taste and doesn't release water when you take the kebab to bake.

Ingredients for making pumpkin kebab stuffed with minced meat:

 1 kilogram of cabotian pumpkin (I used the alligator)

 1 cup kibe wheat

 2 cups of warm water

 1 chicken broth tablet (optional)

 300 grams of mozzarella cheese

 1 medium onion

 3 cloves of garlic

 1 kg of ground beef seasoned to taste

 cottage cheese (optional)

 oil (to taste)

 mint (to taste)

 salt (to taste)

How to make pumpkin kebab stuffed with ground beef:

Wash the pumpkin thoroughly and cut into coarse pieces. Also cut the onion into coarse pieces and arrange on a baking sheet. Drizzle with a drizzle of oil and add a little salt. Place in a pre-heated oven at 250°C for approximately 1 hour.

Place the kibbeh flour in a pot and add the warm water. Let it hydrate for about 30 minutes.

Remove the skins from the already roasted pumpkin and mash the pulp. Season to your taste - in my case I used the onion that was put together in the oven, minced garlic, mint, salt and pepper to taste. Also add the hydrated kebab and the chicken stock, mix the ingredients well and set aside.

Tip: If you don't have mint you can use green peppermint or parsley instead.

Make the ground beef to your liking. In my case, I did it this way: I browned garlic and onion, added the meat, cooked a little and then added salt, chimichurri and green smell. I also added a can of corn and peas (the one that comes with corn mixed with peas) and half a can of peeled tomatoes. Saute everything very well until dry.

Now just assemble the kibbeh: place half of the pumpkin mass on the bottom of the refractory, then place the ground beef, cover with cheese, place a layer of cream cheese and cover with the rest of the pumpkin mass.

Then make those little scratches on top of the kibbeh, drizzle with a little oil and bake at 250°C for 20 minutes. And your pumpkin kibbeh stuffed with minced meat is ready! Try and enjoy this simple and very tasty meal.
